If you love shrimp as much as I do, then this is a great recipe for you to try! I've been trying to decrease my red meat consumption, but I was a craving a burger -like something. I decided to go with a Shrimp Burger. It's such a great alternative and it pairs really well with fresh-cut French Fries!
I recommend getting fresh shrimp, but I understand if you want to use what is already in your freezer. For ease of time, I purchased one pound or so of of shrimp that was already deveined and clean. I can't stress this enough...devein your shrimp!!! If it's something that you hate doing, most seafood markets sell shrimp that has been cleaned (thank you to those people)
I chopped the shrimp into fine pieces instead of putting it in my food processor. You can absolutely use your food processor, it'll make this easier. This just reminds me of a similar recipe my mom used to make with her Shrimp Egg Puffs and the consistency of the shrimp remained. They were either whole or chopped in large pieces in her Egg Puffs and I’ve always preferred that texture.
Pineapple Sour Cream
I figured that I would need some kind of sauce to go with this shrimp burger. I went with a Pineapple Sour Cream sauce. Pineapples and seafood have always been a good match-up for me. The recipe already called for mayo, so I didn't want to overload it with an aioli. Sour cream is light and served as a great substitute. I sliced an avocado and put it directly on the burger and a dollop of the sour cream sauce went on top. Yumm!

Ingredients for Shrimp Burgers:
1 lb chopped, deveined, peeled large shrimp
1/4 cup green onions
1/4 fresh parsley
1/2 cup of red bell peppers
2 small eggs beaten hard
2 tablespoons of mayo
2 tsp of garlic powder
1/4 tsp of salt
3-4 tsp of Old Bay seasoning
1 tsp of lemon juice
2/3 cup of Italian seasoned bread crumbs
2 tablespoons of olive oil ( don't add this to the shrimp burgers, it’s for your skillet)
Avocado, tomatoes, lettuce, etc for garnish
Ingredients for Pineapple Sour Cream
1/2 cup of sour cream
1/4 cup of crushed pineapple ( strained)
1 tbsp of pineapple juice
1 pinch of salt and pepper
What Do I Do With the Sour Cream?:
Mix all of the ingredients in a small bowl and chill while the burgers are cooking.
Place a dollop on top of your burgers when the burgers are done
What Do I Do With the Burgers?:
Mix all of the shrimp burger ingredients together in a bowl.
Cover the bowl with saran wrap and let your mixture marinate in fridge for at least an hour. (If you have time, let it marinate for a few hours)
After an hour, take out your mixture and make 4 large burgers.
In a medium-sized skillet, heat the olive oil on medium heat.
Place the patties in the heated oil and cook through until golden brown on each side. Be careful not to overcook the shrimp.
Place the burgers on a paper towel when they are done cooking to remove excess oil.
Serve on a toasted Brioche or Hawaiian bun.
Add your sliced avocados, tomatoes, lettuce, bacon etc. and top it off with your Pineapple Sour Cream.
