Herb Crusted Lamb Lollipops

There are proteins that I have avoided cooking for fear of messing up the dish. Lamb is on that list! Needless to say, I decided to experiment and it turned out amazing! These lamb lollipops were tender and flavorfu! I can’t believe that it has taken me so long to make lamb. And now, I’m excited for you to try this too!
I went to the butcher and purchased a pack of lamb lollipops that had 9 lollis in it. The lollis weren’t very fatty. Lamb fat is considered gamey so the flavor isn‘t for everyone. It was about $24.00 for this pack of lamb.
Fresh Brussel Sprouts are great! I bought 5 large Brussel Sprouts and turned them into chips. I lightly seasoned the Brussel Sprouts and roasted them in the oven.
Texture wise, I went for mashing the sweet potatoes instead of frying or baking them. Trust me, you won’t be disappointed. I cooked the sweet potatoes first since the boiling process takes so long.
Ingredients for Lamb Lollipops
1 tsp fresh parsley
1 tsp of thyme
1 tsp of oregano
1 1/4 tsp of cumin
3 1/2 tsp of olive oil
1tsp of minced garlic
1tsp of rosemary
Ingredients for Mashed Sweet Potatoes
7 sweet potatoes
1/4 tsp of brown sugar
1 tbsp of butter
Ingredients for Roasted Brussel Sprouts
5 chipped Brussel Sprouts
Dash of Salt
1/4 tsp of Black Pepper
1/4 tsp Onion powder
1/4 tsp of olive oil
What Do I Do With the Sweet Potatoes?:
Cut each sweet potatoe in about 5 circular parts.
Place the sweet potatoes in a pot and boil the sweet potatoes until soft.
Strain the sweet potatoes and place them back in the pot that they were boiled in.
Add the sugar and butter. Mash well.
Place the mashed sweet potatoes to the side and place on low heat.
What Do I Do With the Lamb Lollipops?:
Preheat your oven to 400 degrees.
Mix all of the Lamb Marinade ingredients in a small bowl and cover your lamb on both sides with the marinade. Let it marinate for half an hour.
Take a large saucepan and coat it in olive oil. Allow the oil to become hot.
Sear the marinated lamb on both sides until you get a nice sear. Remove the lamb and place on an aluminum foil lined sheet.
Cook until about 150 degrees (Medium). Ill never recommend well-done meat, however, if you would like your lamb well done, leave it in the oven longer.
What Do I Do With the Brussel Sprouts?:
Cut the base of the Brussel Sprouts and peel th back.
Toss the Brussel Sprouts in the ingredients listed above.
Roast in the oven on 400 degrees for about 10 minutes.
