Cajun Cod, Shredded Crab and Gouda Grits: Fish and Grits

I'm at the point where becoming a Pescatarian does not seem like such a bad idea. This meal was quick and easy! I've worked with Cod on a previous post, so you know that I value it for being light and flaky. Let's not waste any more time and get right into this new recipe!

Cod
I went to the market and purchased 1 pound of Cod fillets for this recipe.I generously seasoned both sides of the Cod fillets with Weber's Cajun seasoning ( you can feel free to use a brand that you have worked with previously or like). The Cod cooks quickly, I highly recommend cooking the grits first.

Crab
We were having crab legs for dinner, so I decided to take one leg and use it as a garnish. The sweet Snow Crab created a balance for the spice of the Cajun seasoning.
Gouda Grits
If you like Cheddar cheese, then you will enjoy Gouda. Gouda is sweeter, nuttier, and a bit creamier than Cheddar. I cooked the grits with both Gouda and Sharp Cheddar cheese. I cooked the grits in evaporated milk and chicken broth for more flavor.

Ingredients for Grits:
1 1/2 cups of Gouda
1 cup of Sharp Cheddar Cheese
1/4 tsp of Salt
1/4 tsp of Pepper
2 cups of Evaporated Milk
1 cup of Chicken Broth
1 cup of Quick Cooking Grits
Ingredients for Cod
Cajun Seasoning ( I like Weber's Cajun Seasoning)
1 lb of Cod
Olive Oil for cooking
Crab Garnish
1/4 cup of lump Crab meat or shredded Crab legs ( real crab, please do not use imitation crab)
What Do I Do With the Grits?:
Bring the chicken broth and evaporated milk to a boil in a medium saucepan. (stir occasionally, as evaporated milk can burn.)
At the point of boiling, add the grits and whisk constantly for about a minute or two to avoid clumps.
Reduce the heat to low and cover. The grits will thicken in about 5 minutes.
Stir in the grated or shredded cheese, salt and pepper.
Taste and season more if you wish –
Leave on low while you prepare your Cod
What Do I Do With the Cod?
Add olive oil to a medium-sized pan on med-high heat.
Once the oil is hot, cook your cod on both sides for about 3-4 minutes. It is okay if your cod begins to flake.
Carefully add your Cod to a bowl of hot grits that you have prepared.
Add more grated cheese, crab meat and enjoy !
