Blackened Cod Sandwich w/ Mango Aioli
Place the two pieces of cod in the bag, seal, and refrigerate back home (Pittsburgh) that sells the most amazing fried cod sandwiches and I got an urge to have some cod. This recipe is not for fried cod. Are you disappointed? Don't be, we'll have fried delicacies soon :) We're going a bit healthier and cooking the cod on the stove top.

What's nice about cod is that it is a thicker fish. It allowed me to create a hearty sandwich. I just can't eat little, skimpy sandwiches. I bought this at my local market. It was fresh and not frozen ...which is a bonus. I genuinely didn't have to do any work to it. We work smarter not harder people!
I took the cod and put in a marinade for about 20 minutes. I just wanted to be able get more flavor this way. Seasoning the outside of your cod is fine, but I recommend the quick marinade for a flavor boost.
When you cook your cod it will start to flake and that's a good thing. If cod doesn't flake and becomes tough, then it is over cooked :(

Mango Aioli
Tartar sauce is great and all, but I think fish pairs really well with fruits. Mango is in my Top 5 favorites of fruits. Luckily, the mangos at the market were already ripe. I ate one beforehand and it was sweet and tangy. I though that that would complement the marinade well. So I figured that a mango aioli would be perfect with this sandwich. There is more mango than there is mayonnaise ...and I prefer it that way.

Ingredients for Blackened Cod Sandwich:
Yields: 2 sandwiches
2 Tbsp of garlic powder
1/4 tsp of salt
1/4 tsp of black pepper
1/2 tsp of cumin
2 tsp of oregano
1 1/2 tsp of smoked paprika
1 pinch-ish of cayenne pepper
1 lb of cod, sliced in two pieces
1/4 cup of butter (to cook the cod)
1/4 cup of thinly sliced red cabbage (it's really purple)
Ingredients for Mango Marinade
1 cup of Mango nectar
2 sprigs of thyme
Ingredients for Mango Aioli
1 1/2 mangos, sliced and chopped
1 tbsp. of mayo
A few dashes of Tajin

What Do I Do With the Mango Aioli?:
Put all of the ingredients in a small blender and serve
What Do I Do With the Mango Marinade?:
Put all of the ingredients in a large ziplock bag
Place the two pieces of cod in the bag, seal, and refridgerate
Allows the cod to rest for about 20 minutes.
What Do I Do With the Cod?:
Mix all of the seasonings ( not the oil )
After your cod is done marinating, take it out of the fridge
Place your cod down on a clean surface.
In a medium-sized skillet, heat the butter on medium heat.
Place the cod in the heated butter and cook through for about 4 minutes on one side
Flip the cod over and cook for another 4 minutes on the other.
Remove from heat
Place your cod on a buttered toasted brioche bun
Add your Mango Aioli and red cabbage and enjoy!
