What Does Barcacoa Mean?
(in Mexican cooking) beef, lamb, or other meat that has been slowly cooked with seasonings,
For my experimenting threshold, I went with a chuck roast and not beef cheeks, tongue etc.
Slow Cooker Vibes:
Back Story: my slow cooker and I have a love-hate relationship. Three years ago, I used a slow cooker for the first time and I made an insanely over-cooked roast. After that terrible experience, I put that slow-cooker in the cabinet and it stayed there until 2020 (no exaggeration). Since then, I have made some delicious meals using that thing ( LOL). But, I will never forget the taste of that dry behind roast.
Okay, let’s get back on track. The roast and all of the sauce contents go right in your slow cooker on low and you just let it do it’s thing. It's that simple. With a lot of people working from home now, this is a great toss it in and leave it meal.

I used about 3 pounds of chuck roast. I cut the roast into 6 big chunks and placed it directly into the crock pot. At no point during prep or cook do I trim the fat from the roast. I prefer to let the flavor from the fat cook through.
Mildy Spicy Sauce:
I don’t know about you, but some of my favorite ingredients come out of the international aisle at the grocery store. Whether it is sauces, spices, or sweets …I typically head over to that aisle when I’m on a shopping trip.
For this recipe, the International aisle is where I found my chipotle in adobo sauce, diced green chiles, oregano, cloves, and bay leaves.
As delicious as tacos are, you may not want to have them everyday for 3 days. I suggest putting the beef and sauce over white rice, strained cauliflower rice, or in a lettuce wrap! Super versatile!
Ingredients for Barbacoa Tacos:
Yields: 14+ small tacos
3 pounds of Chuck Roast (cut into 6 -8 large pieces)
1/2 cup of Beef Broth
3 chipotle in Adobo sauce
3 bay leaves
1 4oz can of diced green chiles
1 medium sized onion (chopped)
1/4 tsp of ground cloves
1 tbsp or oregano
1/4 cup of lime juice
1/2 tsp of black pepper
4 tsp of minced garlic
2 tsp of paprika
1 tsp of cumin
2 tsp of salt
Ingredients for Barbacoa Tacos Garnish:
2 Diced Tomatoes
What Do I Do With the Ingredients?:
Cut the roast into 6-8 large pieces and place into large slow cooker
Add all of the ingredients listed for the tacos into the crockpot
Cook on low for about 6-8 hours or until tender. Feel free to occasionally bathe your meat in the sauce.
After the meat is done, garnish with the ingredients listed.
Scoop some of the sauce into a small dish and pour on top of your tacos and enjoy!
