Chicken Parmesan

If we were on a game show and they asked you what my favorite chicken dish is, you had better say Chicken Parm !!

It's really important to me to recreate my restaurant favorites at home. Why? Because I love being in my kitchen and ...it's cheaper that way. I typically order Chicken Parm when I go to an Italian Restaurant. Besides, lasagna, it's my go-to. I wanted to be able to have one of my favorites without having to get dressed, drive half an hour away, and go to a restaurant.

Yields: Feeds 4


  1. 3 large chicken breasts

  2. 1/2 cup of all purpose flour

  3. 1 tsp of salt

  4. 1 tsp of black pepper

  5. 1/2 cup of Italian bread crumbs

  6. 2/3 cup of parmesan cheese

  7. 1 cup of mozzarella cheese

  8. 2 tbsp of olive oil

  9. 2 large eggs beaten until frothy

  10. 1 cup of mozzarella cheese

  11. 1/4 cup of fresh parsley (garnish)

  12. Marina Sauce

What Do I Do? :

  1. Preheat your oven to 400 degrees.

  2. Trim the chicken breasts of fat and clean with vinegar. Pat the chicken dry and butterfly the chicken, season with salt and pepper.

  3. In a small bowl, mix together 1/2 cup of flour, 1 tsp of salt, 1 tsp of black pepper. Pour onto a paper plate and set aside.

  4. In a small bowl, whisk together 2 eggs until frothy. Pour onto a paper plate and set it aside.

  5. In a small bowl, mix together 1/2 cup of Italian bread crumbs, with 2/3 cups of parmesan cheese. Pour onto a paper plate and set it aside.

  6. Dip both sides of each butterflied chicken into the flour, then in the eggs, then in the breadcrumbs.

  7. Heat a large non-stick pan over medium heat, add enough olive oil to coat the bottom of the pan, sautee 3-4 min on both sides until golden brown, or until you digital thermometer hits 165 degrees.

  8. In a large baking dish, pour in half of your marinara sauce. Place the six pieces of chicken in the dish. Spoon the rest of the marinara sauce on top of the chicken. Top the chicken off with mozzarella.

  9. Place the casserole dish in the oven at 400 degrees for 10-15 minutes. The cheese should be melting. (*Remember that the internal temperature of chicken should be 165 degrees)

  10. Garnish with fresh parsley and serve over pasta or as is. Enjoy!
